Healthy Summer Breakfast

Olive Oil Honey Yogurt Bowl

Watermelon Mint Cooler

2 Servings
Ingredients
3 cups fresh watermelon, cubed
10 fresh mint leaves
1 lemon, juiced
1 cup filtered water
1 teaspoon raw honey
1 pinch sea salt
0.5 cups sparkling water (optional, to top)
Steps
Blend base: Add 3 cups fresh watermelon, cubed, 1 lemon, juiced, 1 cups filtered water, 1 teaspoons raw honey, and 1 pinch sea salt to a blender. Blend until smooth.
Strain: Pour through a fine mesh strainer into a pitcher, pressing to extract all liquid. Discard pulp or save for smoothies.
Add mint: Add 10 fresh mint leaves to the pitcher and muddle gently with a spoon. Let sit 5 minutes to infuse.
Serve: Pour over ice. Top with 0.5 cups sparkling water (optional, to top) if using. Garnish with a mint sprig and thin lemon wheel.
